Oyster Mushroom and Lemongrass Stir-Fry 

Ingredients:

1 teaspoon of Fruit Bodhi Organic Mushroom Seasoning

1 1/2 tablespoons of soy sauce

1/2 teaspoon of sugar

2 tablespoons of vegetable stock

3 - 4 tablespoons minced fresh lemongrass

4 cloves of garlic

1 serrano chilli

500g of Fruit Bodhi Organics Fresh Oyster Mushrooms

1 1/2 tablespoons vegetable oil

1/2 of one white onion

1 lime wedge

2 tablespoons roughly chopped coriander

Serves 4

Method:

 

Mix together the mushroom seasoning, soy sauce, sugar, and vegetable stock and set aside.

Mince the lemongrass and garlic, and finely chop the chilli. Tear the oyster mushrooms into bite-size chunks.

 

Warm the oil in a very large pan over medium-high heat. Add the lemongrass and garlic and stir-fry for 1 1/2  minutes.

Add the mushrooms and cook, stirring frequently, for 3 to 5 minutes, until they soften. Add the finely sliced onion, stir to combine, then pour in the seasoning sauce mixture.

Stir-fry for another 1 to 2 minutes, until the liquid, is no longer visible, and the mushrooms have cooked through.

 

Turn off the heat and let sit for a minute to develop flavours.

 

Serve with coriander and a squirt of lime juice.
